Hello, Nomidachi!How are you? We've started to see a few of you trickle back to the bar, and we're glad to have proof of "Dry January" survival. (Brutal, brutal month for us and our colleagues in the food and liquor dispensary arts.)
Now that we've turned the page on the calendar, we are thrilled to see what's ahead in the coming days and weeks.
(By the way, February 9 marked the 3-year anniversary of opening at our current First & Cherry location. Thank you all for your patronage and support and for coming along with us on this crazy ride!) We just received word from one of the distributors that the first wave of limited spring release namazake from importer Japan Prestige has landed in their warehouse, and they are eager to unload them on us. (NOTE: Over the next 2-3 months, we are scheduled to receive approximately 20 varities of these spring namas--by far the most we've had access to since opening our business!) Our allotment of all the sake listed below is 2 cases/24 bottles. There are a couple new selections that we are receiving for the first time, but you may be familiar with the rest from past years.
Our plan is to bring in 2-3 varities each week, introducing them on the weekly tasting menu so that the most people possible will have a chance to experience them by the glass, in addition to the option of buying retail bottles to go. We haven’t yet determined the order in which we will receive them, but your input (orders) will greatly influence it.
All prices listed will be reduced 10% for cumulative orders totaling 6 bottles or more, making it a “case” discount. (On another super positive note, most pricing has actually reduced or stayed the same as last year, though most people in the industry expected wide scale inflation-related price increases from the producers.)

Nanawarai Junmai Ginjo Shiboritate Nama Genshu (Nagano)
New to Washington! Faint golden tint with clean aromas of spring blossoms, pear, and pineapple. Soft, full mouthfeel with solid, persuasive acidity. Elegant sweetness and balance, packed with umami and expressive of shiboritate freshness. $55/720 ml Kamikokoro Toukagen Shiboritate Junmai Ginjo Nama Genshu (Okayama) Pronounced golden hue, with notes of white, sweet peaches in the nose. Rich sweetness gives way to cinnamon-tinged spiciness riding on a pleasant viscosity. This nama genshu (unpasteurized and undiluted sake) is brewed with a yeast cultivated from white peaches. Kamikokoro means “heart of the gods.” $55/720 ml bottle Gokyo Arabashiri “First Run” Junmai Nama Genshu (Yamaguchi) Tart, young fruit flavors of pear and apple. Soft mouthfeel is in pleasant contrast to solid acidity and slightly bitter notes in the finish. The brewery, Sakai Shuzo, was established in 1871. $60/720 ml bottle Tsukasabotan Senchu Hassaku Tokubetsu Junmai Shiboritate (Kochi) Greenish gold tint, with toasty cedar notes in the nose. Light mouthfeel. Dry (+8 SMV!) and clean, with hints of citrus and peach. The importer adds, “Very dry shiboritate (freshly pressed) sake with refreshing acidity, fruity, round, and deep-taste (sic). Quick finish.” $55/720 ml bottle Kamikokoro Fuyu no Tsuki Junmai Ginjo Muroka Nama (Okayama) Tingly notes of white peach and champagne in the nose. Greenish gold, almost amber coloring. Mild mineral effervescence with some body and weight to it. Dense, compact, rich flavor, and surprisingly semi-dry for a SMV -3 sake. $70/720 ml bottle Kisoji Shiboritate Junmai Ginjo (Nagano) New to Washington! From the importer: Sweet aroma reminiscent of peach and muscat. Fine sweetness and fizzy mouthfeel with a suggestion of refreshing herbs before the clean, dry finish. $55/720 ml bottles Daisekkei Tokubetsu Junmai Muroka Nama Genshu (Nagano) Golden green tint. Definitely fizzy and lively with tiny bubbles when the bottle is popped open. Notes of white grapes and lemon in the nose. Richly flavored, dry and displaying minerality, with a dry, slightly bitter finish. $55/720 ml bottle Hanahato Hatsushibori Junmai Ginjo Nama Genshu (Hiroshima) From the importer: “Refreshing aroma of grapes, soft mouthfeel, and expansive juicy flavor. A moderate acidity leads to a nicely balanced and clean finish.” $60/720 ml bottle Harushika “Spring Deer” Shiboribana Junmai Ginjo (Nara) Slight yellow tint, with essence of strawberry and gardenia. Clean and vaguely citrus. Tingly and astringent character, with mineral notes in the somewhat dry finish. $50/720 ml bottle
