Greetings, Nomidachi!


What a terrific time of year to be enjoying premium sake!

Of course, we feel that way about ALL the seasons, but autumn is just special. Drink it warm (we'll be breaking out the kansuke warmer this week), drink it chilled, drink it unpasteurized, or drink it pasteurized once or twice--they're all possibilities--but, by all means, let's support the brewers and their ceaseless efforts and JUST DRINK IT!

SPECIAL ANNOUNCEMENT/REMINDER:


We are excited to announce that Mr. Kazuhiro Maegaki, president of Hiroshima's Kamoizumi Brewing Company, will be joining us at Saké Nomi for the next edition of our "Meet the Brewer" tasting series on Tuesday, November 14 at 6:00- 8:00 pm.

At the tasting, we will be spotlighting three varieties of Kamoizumi sake currently available to us, including a junmai daiginjo, a junmai ginjo, and an unpasteurized ginjo nigorizake. Complimentary samples, specially priced tasting flights, and light snacks will be available during the event. While reservations are not required, please feel free to get in touch should you have any questions about the event.

Though it will be Maegaki's first visit to Seattle, after a bit of sake sampling, we'll see if we can coax from him the story behind the "meet cute" scenario between him and Johnnie in Hiroshima a few years back . . .

At any rate, we hope you'll join us on 11/14 to welcome Maegaki-san to Seattle and take advantage of the opportunity to express your appreciation for his delicious, high-quality sake directly to "the Man" himself.

It's the time of year where we begin to see the autumn seasonal release hiyaoroshi style of sake, and this year we are set to receive liquid tons of the stuff.

We have finally received notification that the 15 varieties of hiyaoroshi sake that we ordered earlier in the year have arrived and are in the temperature-controlled warehouse of our Seattle distributor.

We are attaching a list here with brief tasting notes (courtesy of the importer) and pricing information. We were able to get a few of these sake in the past, but the majority are new to Washington this year. You probably will recognize some of the brands from the spring and summer nama versions.

We are beginning to receive (and feature on the menu) these sake TODAY, bringing in 3 or so varieties at a time. If you’re interested in ordering anything, please do so by Saturday, 11/11 and that will be a tremendous help for us to plan our purchasing.

We are thrilled to share these sake with you and hope to see you at Saké Nomi again soon!



Autumn (November) 2023 Hiyaoroshi Releases
 
Daisekkei Tokubetsu Junmai Hiyaoroshi (Nagano)
Refreshing gentle aroma of muscat with slightly sweet caramel aroma. Soft mouthfeel, expansive round umami savory flavor of Hitogokochi rice and crisp dry finish. Serve chilled or warm. $50/720 ml
 
Gokyo Junmai Hiyaoroshi (Yamaguchi)
Moderate aroma of rice harmonized with fruity aroma of melon and banana. Medium dry sake with smooth mouthfeel, expansive savory flavor, superbly balanced with sweet and mild acidity. Serve chilled or warm. $50/720 ml
 
Harushika Junmai Ginjo Hiyaoroshi (Nara)
Brilliant fruity aroma of pear and white peach. Nicely balanced with mild sweetness, savoriness, and fruityness. Serve chilled or warm. $50/720 ml
 
Kamikokoro Umakuchi Junmai Ginjo Genshu Hiyaoroshi (Okayama)
Tranquil aroma of rice with umami. Well-balanced rich umami and deep taste with crisp acidity, slightly sweet. Serve chilled or warm. $55/720 ml
 
Kikuhime Tokubetsu Junmai Hiyaoroshi (Ishikawa)
Fruity aroma of banana and melon, sweet aroma of sweet potato and chestnuts, combined with cottage cheese and fresh bamboo leaf. Fully matured, expansive, balanced juicy umami, and sweetness with refreshing crisp acidity. Serve chilled, on the rocks, or warm. $70/720 ml
 
Kinoene Junmai Ginjo Genshu Hiyaoroshi (Chiba)
Gorgeous fruity ginjo aroma of green apple and grapes. Refreshing fizzy feel on the tongue. Well balanced with slight viscous sweetness and pleasant acidity. Serve chilled. $55/720 ml
 
Kinoene Okarakuchi Junmai Hiyaoroshi (Chiba)
Tranquil refreshing aroma of muscat. Very dry, well balanced, expressible savory umami flavor of 80% polished rice, deep clear taste with clean acidity. Serve chilled, at room temperature and warm. $40/720 ml
 
Kisoji Yamahai Junmai Hiyaoroshi (Nagano)
Fine aroma of muscat and apple with rich and matured aroma. Brewed by yamahai method, using natural yeast without adding lactic acid. Dense, juicy flavor of grapes and pea,r with multi-level umami, acidity and sweetness. Fruity and silky mouthfeel aftertaste. Serve chilled or warm. $55/720 ml
 
Koshinohomare Junmai Hiyaoroshi (Niigata)
Brewed with Niigata grown Gohyakumangoku rice, and buried in the snow for 250 days. Slowly matured in low temperature and high humidity surroundings in the snow cellar. Well balanced expansive flavor and round taste with pleasant finish. Serve chilled or warm. $45/720 ml
 
Nanawarai Junmai Ginjo Hiyaoroshi (Yamagata)
Tranquil aroma of apple and tropical fruit aromas of mango and pineapple.
Satisfying sweetness of ripe fruits and bursting acidity of pineapple. Crisp finish. Serve chilled or at room temperature. $50/720 ml
 
Oyama Tokubetsu Junmai Hiyaoroshi (Yamagata)
Light & smooth. Fruity aroma of apple, melon, la france and peach. Expansive, balanced juicy umami with volume and mild taste with crisp acidity and soft texture. Serve chilled or at room temperature. $55/720 ml
 
Sawanoi Junmai Hiyaoroshi (Tokyo)
Moderate tempting slightly matured aroma with apple. Smooth and viscous feel on the tongue. Balanced savory flavor with juicy taste. Refreshing umami savoriness and tartness in aftertaste. Serve chilled or warm. $40/720 ml
 
Toyonoaki Junmai Hiyaoroshi (Shimane)
Moderate aroma of umami of rice. Very dry, full and round taste with savory umami flavor of banana and rice. Clear and crisp aftertaste. Serve chilled or warm. $50/720 ml
 
Tsukasabotan Senchu Hassaku Junmai Genshu Hiyaoroshi (Kochi)
Gorgeous, expansive aroma of citrus fruits. Very dry, sharp, and refreshing, with round, savory umami, balanced acidity, and subtle sweetness. Serve chilled or warm.

Urakasumi Tokubetsu Junmai Hiyaoroshi (Miyagi)
Soft and lively, with deep, resonating umami. The mild spice in the pleasantly lingering finish perfectly embodies and brings to mind a crisp, mellow autumnal afternoon. Serve chilled or slightly warm. $55/720 ml
